Born in the village of Verpillières-sur-Ource, Marie Copinet's Champagne Nos Pas Dans la Pierre Nature is a pure and luminous expression of Pinot Noir. We are in the Côte des Bar, located in the department of Aube, a wine-growing region renowned for its limestone and marl-rich soils, ideal for the cultivation of Pinot Noir. Verpillières-sur-Ource, in particular, is a village that embodies the tradition and passion for viticulture, with vineyards that benefit from a favourable microclimate and soils that give the wines a distinctive structure and complexity. The vinification process involves fermentation in stainless steel tanks at a controlled temperature, maintained between 14 and 16°C, to preserve the wine's freshness and minerality. The wine is then left to mature on the lees for about 9 months, enriching its structure and complexity, before being bottled and aged further in the cellar. Subtle and concentrated bouquet, dominated by mineral notes of limestone, accompanied by hints of lime, green apple, biscuit and blackcurrant. On contact with oxygen, aromas of fresh apricot, grapefruit, sultanas, orange marmalade, plum and toasted pineapple emerge. In the mouth it is clean and fresh, with a creamy and enveloping effervescence. The fruity structure is juicy and supported by a well-integrated acidity, which gives balance and persistence to the sip. Thanks to its structure and careful vinification, Nos Pas Dans la Pierre has remarkable ageing potential. Although it is ready to be enjoyed immediately, it can evolve well in the bottle for several years, developing further aromatic and gustatory complexities. Ideal with appetisers and raw fish, but also lends itself well to accompanying white meat dishes, thanks to its structure and freshness.
