    • In Montigny-sous-Châtillon, in the Marne Valley, La Ruelle des Loups Extra Brut Champagne is produced. One of the interesting labels proposed by Marie Copinet. This Blanc de Noirs, obtained from a blend of 60% Pinot Meunier and 40% Pinot Noir, is an authentic expression of the sandy terroir of this area, offering a refined and complex taste experience. In Montigny-sous-Châtillon the vineyards benefit from soils that are poor in organic matter but excellent for drainage. These soils, combined with a temperate climate, favour early ripening of the grapes, guaranteeing high quality harvests with limited yields. An interesting fact: the plot of land from which the grapes for ‘La Ruelle des Loups’ come was planted in 1968. The wine-making process begins with fermentation in stainless steel tanks, followed by ageing for at least 11 months in wooden barrels. During this period, the wine undergoes malolactic fermentation, which contributes to greater smoothness and complexity. A special feature of this Champagne is the use of a cork stopper (‘bouchon liège’) during ageing on the lees, a practice that favours optimal micro-oxygenation, improving the refinement and structure of the wine. The dosage is kept within the parameters of Extra Brut, with about 3 grams of sugar per litre, thus enhancing the freshness and minerality of the final product. Intense bouquet with notes of small red fruits, rennet apples and a hint of fresh honey; in the mouth it has a rich and dense structure, balanced by a thirst-quenching freshness. The ageing in wooden barrels gives the wine a light, well-integrated woody note that adds complexity without overpowering the fruity components. The finish is long and mineral, leaving a sensation of elegance and cleanliness. With good ageing potential, this Champagne lends itself beautifully as an aperitif, thanks to its freshness and liveliness.
