In Montigny-sous-Châtillon, in the Marne Valley, La Ruelle des Loups Extra Brut Champagne is produced. One of the interesting labels proposed by Marie Copinet. A special feature of this Champagne is the use of a cork stopper (‘bouchon liège’) during ageing on the lees, a practice that favours optimal micro-oxygenation, improving the refinement and structure of the wine. The dosage is kept within the parameters of Extra Brut, with about 3 grams of sugar per litre, thus enhancing the freshness and minerality of the final product. Intense bouquet with notes of small red fruits, rennet apples and a hint of fresh honey; in the mouth it has a rich and dense structure, balanced by a thirst-quenching freshness. The ageing in wooden barrels gives the wine a light, well-integrated woody note that adds complexity without overpowering the fruity components.
