An interesting Champagne. We are talking about the Blanc de Blancs Cuvée Holo Brut produced by Alain Mercier in Passy-sur-Marne. 100% Chardonnay grapes, cultivated according to a reasoned culture method and harvested by hand. During vinification of the bases, the wines also undergo malolactic fermentation. Maturation of the wine in the bottle in contact with its yeasts guarantees the finished wine a good complexity. The Cuvée Holo presents itself in the glass with a beautiful straw-yellow colour, perfectly brilliant. In the glass, it is easy to admire the lively effervescence that gives rise to a persistent foam on the surface. On the nose, it reveals a fine and elegant profile, with discreet floral notes preceding aromas of menthol and herbs. Complex, ripe notes of liquorice and chocolate also emerge. On the palate, the Blanc de Blancs Cuvée Holo Brut reveals a well-balanced taste, with a generously long finish reminiscent of brioche and citrus notes. A wine of great elegance, it is characterised by a perfect balance between acidity and smoothness, perfect to be enjoyed on its own or in combination with delicate fish or shellfish dishes.
