An elegant synthesis of champenoise tradition and the Maison's innovation, this Champagne Brut Tradition Premier Cru from Gonet-Médeville comes from vineyards in Bisseuil, in the heart of Champagne. A unique terroir, made special by the chalky soil that lends freshness and fine minerality to the wine. The chalk, typical of the Champagne region, plays an essential role in characterising the aromatic profile of the grapes, favouring uniform ripeness and lively acidity. The latter characteristic is then clearly found in the glass. Specifically, this wine is made from a blend of 70% Chardonnay, which gives freshness and floral notes, 25% Pinot Noir, which adds structure and aromatic intensity, and 5% Pinot Meunier, which gives roundness and softness. Harvested strictly by hand, the best grapes are carefully selected in the field. After harvesting, the grapes undergo a soft pressing, followed by fermentation divided between thermoregulated steel tanks (90%) and used barriques (10%). This preserves the freshness of the fruit, adding a touch of complexity. The wine then matures for 30 months in the bottle on the lees, developing elegance and aromatic depth. Finally, after dégorgement, it is left to rest in the cellar for at least another 4 months before release. Straw yellow in colour, brilliant and inviting, on the nose this Brut Tradition releases subtle notes of yellow fruit and citrus fruits, with hints of ripe banana and delicate aromas of yeast and bread crust. In the mouth, it is fresh and creamy, with a perfect harmony between acidity and roundness. The persistence is long, characterised by a subtle and pleasant minerality. Perfect as an aperitif, this Champagne goes well with fish dishes such as carpaccio, sushi and sashimi. Excellent with fresh cheeses or light first courses.
