100 percent Pinot Noir, this "Made in Champagne" rosé has all the makings of a favorite sparkling wine for many of our country's fans as well. This is proposed by Maison Jean Vesselle, based on the Montagne de Reims in the village of Bouzy. This Rosé de Saignée is made after a short maceration of the must with the skins. A phase that goes on for no more than 24 to 48 hours, depending on the vintage, just long enough to achieve a clear, bright color. In order to apply the Saignée technique, however, healthy, well-ripened grapes must be harvested and bitter tannins must be avoided. This delicate process, however, not only gives the wines a unique and more stable color, but also embellishes the wine with the most typical Pinot Noir aromas, with the small red fruits in fine evidence. In the glass it is a beautiful deep claret pink color, with an intense bouquet reminiscent of delicate notes of red flowers. Followed by mint, lavender, oriental spices, red berries and cinnamon. In the mouth, then, it is intense and mineral. Appropriately savory, but without lapsing into excess. A champagne with a pleasantly gastronomic nature, it pairs well with a variety of courses. Even with roast suckling pig, tasty cheeses and some desserts that are not too sweet.
