Languedoc-Roussillon is a land of contrasts, where the Mediterranean climate merges with the influence of the Atlantic Ocean and the Pyrenees. A varied terroir, characterised by limestone, clay and gravel soils, which gives the wines a unique complexity. Blanquette de Limoux is a protected designation of origin (PDO) located right in the heart of Languedoc-Roussillon. It involves the use of specific grape varieties, mainly Mauzac, Chardonnay and Chenin Blanc. The Moulin Brut, offered here by Domaine J. Laurens, is made from a blend of Mauzac (90%) and Chardonnay (10%) and is produced using the traditional method. The refermentation in the bottle, followed by a long period of ageing on the lees, allows us to obtain a sparkling wine of great finesse and persistence. It has a brilliant straw yellow colour and a fine, persistent perlage. The nose perceives aromas of green apple, acacia flowers and apricots, which blend into an elegant and refined bouquet. In the mouth it is fresh and lively, with a pleasant acidity and a long and persistent finish. An extremely versatile wine, it goes well with a variety of dishes. Ideal as an aperitif, it can also accompany dishes based on fish, shellfish, white meats and fresh cheeses.
