On the nose, the refined floral components refer primarily to elderflower, followed by rosemary and thyme, and fruit, divided between gooseberry, nectarine and refreshing lime. In the background is a delicate nuance of yeast. The freshness on the palate is decisive, flanked by a good savouriness. Long persistence on a citrus echo for a slightly balsamic finish.   • The one proposed here is the purest and most surprising version of Franciacorta DOCG. We are talking, in fact, about a Brut Nature, to which no sugar is added to make it softer and more pleasant. But let us proceed with order. It is born in the heart of Franciacorta, in Provaglio d'Iseo. This Franciacorta DOCG Brut Nature is made entirely from Chardonnay grapes that have their roots in the beautiful hills shaped by glaciers over the millennia. The soils here are moraine and rich in minerals, ideal for growing vines. The southern exposure of the vineyards also guarantees excellent ripeness of the grapes, which are thus able to bring freshness and minerality to the wine. The grapes, harvested at the right degree of ripeness, are pressed and the must obtained ferments in steel vats. Then, after careful blending, the base wine is bottled with the addition of yeasts and sugars to start the frothing process. This is followed by a long maturation on the lees for at least 20 months, during which the wine develops its complex aromatic notes and fine perlage. At the end of this phase, the wine is disgorged and re-tapped without any dosage, i.e. without the addition of liqueur d'expédition. The result? To the eye, it has a luminous golden yellow colour, enhanced by a persistent perlage. On the nose, the bouquet is intense and complex, with notes of elderflower, rosemary and thyme, complemented by fruity nuances of gooseberry, nectarine and lime. A delicate nuance of yeast finally adds depth to the aromatic profile. In the mouth, freshness is the protagonist, flanked by a good savouriness that gives the wine great minerality. This Franciacorta DOCG Brut Nature is the wine to uncork for a refined aperitif. Excellent with delicate fish and white meats.

    A young company, but already well established on the Italian wine scene, Pavò Franciacorta is rooted in a passion for wine and the territory from which it originates. Founded in 2010, the company began marketing its first Franciacorta DOCG wines in 2015, under the expert guidance of oenologist Cesare Ferrari. The name Pavò recalls a chance encounter with a magnificent peacock within the vineyards. It symbolises the beauty and elegance that characterise the estate's wines. The image of the peacock, with its colourful plumage and majestic presence, thus becomes the symbol of a winery that wants to stand out for the excellence and refinement of its products. The winery is located in Provaglio d'Iseo, in the heart of Franciacorta. Thanks to its location, north of the lake, the winery enjoys a favourable microclimate, with mild temperatures and good exposure to the sun that guarantees the perfect ripening of the grapes. Chardonnay and Pinot Noir, the typical Franciacorta grape varieties that form the basis of the sparkling wines, are cultivated here. The winery is managed by Ettore Cristini, cellar manager and passionate connoisseur of good wine, who has managed to combine tradition and innovation in a perfect balance.
