    Franciacorta DOCG Pas Dosè Zero
  • Zèro is the Pas Dosé, i.e. the driest of the sparkling wines produced by Contadi Castaldi. A Franciacorta made from Chardonnay and Pinot Noir grapes, grown in the heart of the territory of origin. One of the most representative wines of the company that is produced following a strict protocol to ensure style and quality. After a soft pressing to extract only the best part of the juice from the grapes, separate alcoholic fermentation of the two grapes takes place in steel. The wines obtained are left in contact with their own yeasts for a period of at least seven months, necessary to make them richer and more complex. During the same period, malolactic conversion is promoted, giving the base wines greater structure and softness. This is followed by blending and bottling and maturation on the lees for no less than 36 months, at the end of which disgorgement takes place and only wine is added to fill the bottle. There is no addition of sugar to alter or soften the wine. No artifice, no shortcuts. The result, however, satisfies the palate and the spirit. In the mouth, in fact, is pleasantly dry and very defined. Enveloping, savoury and above all long, in fact extremely long. A bubble that knows how to make us feel good.

Founded in 1991, Contadi Castaldi is one of the most popular wineries in Franciacorta. One of those wineries that, thanks to the quality of its wines and a more than enviable consistency of production, have become over the years a real point of reference for wine lovers and experts. The company belongs, together with Bellavista, to the Moretti group. It was originally an old furnace that the visionary entrepreneur converted into a sparkling wine house. Its wide spaces and long tunnels, once used for firing bricks, in fact, proved to be perfect for the refinement of sparkling wines. One of the first wineries in Franciacorta to have developed the concept of Satèn, Contadi Castaldi offers a range of wines characterized by great elegance and a strong recognizability. The company currently has about 18 hectares of its own vineyards and is able to directly follow the entire production cycle of sparkling wines, from the production of base wines to the elaboration of wines that must rest for several months on the lees in the cellar. If Franciacorta has now become almost synonymous with quality Italian sparkling wine, part of the credit must go to the commitment of fine wineries such as Contadi Castaldi.
