    Franciacorta Brut DOCG
  • Born in the heart of Franciacorta, in Provaglio d'Iseo, this Franciacorta DOCG Brut is a sparkling wine of great elegance and complexity. Son of a purezaz vinification of Chardonnay grapes, this noble grape variety finds an exceptional terroir here on the shores of Lake Iseo. The hills of Franciacorta, in fact, with their moraine soils and mild climate, offer the Chardonnay vines ideal conditions for producing grapes of the highest quality. The southern exposure of the Pavò vineyards also guarantees perfect ripening of the grapes, giving the finished wine aromatic richness and structure. Brought to the winery within a few hours of harvesting, the grapes are immediately pressed and the must is fermented in steel vats. After blending, the base wine is bottled with the addition of yeasts and sugars for the delicate frothing phase followed by a long ageing on the lees for at least 20 months. As soon as it is poured, this Brut reveals a brilliant straw yellow colour, enhanced by a fine and persistent perlage. The nose reveals an intense and sunny bouquet, with notes of yellow peach, apple, medlar and delicate floral hints of dandelion. These are joined by more complex nuances of vanilla, turmeric and toasted almond, giving the wine a unique depth and richness. In the mouth, the creaminess and envelopment blend with a lively freshness and delicate savouriness, creating a perfect balance. The persistence is long and pleasant, with pleasant toasted and spicy returns. Excellent as an aperitif, this Franciacorta goes well with raw seafood, carpaccio, sashimi and more generally with delicate fish dishes.

A young but already well-established reality on the Italian wine scene, Pavò Franciacorta is rooted in a passion for wine and the territory from which it originates. Founded in 2010, the company began marketing its first Franciacorta DOCG wines in 2015, under the expert guidance of oenologist Cesare Ferrari. The name Pavò recalls a chance encounter with a magnificent peacock within the vineyards. It symbolises the beauty and elegance that characterise the estate's wines. The image of the peacock, with its colourful plumage and majestic presence, thus becomes the symbol of a winery that wants to stand out for the excellence and refinement of its products. The winery is located in Provaglio d'Iseo, in the heart of Franciacorta. Thanks to its location, north of the lake, the winery enjoys a favourable microclimate, with mild temperatures and good exposure to the sun that guarantees the perfect ripening of the grapes. Chardonnay and Pinot Noir, the typical Franciacorta grape varieties that form the basis of the sparkling wines, are cultivated here. The winery is run by Ettore Cristini, cellar manager and passionate connoisseur of good wine, who has managed to combine tradition and innovation in a perfect balance.
