Franciacorta DOCG Satèn. The Pavò winery of Franciacorta offers it here. A delicate and refined expression of the fine Brescian sparkling wine tradition. Born in Provaglio d'Iseo, in the heart of the wine region, this Satèn perfectly represents its territory of origin. Made from pure Chardonnay grapes, this variety always gives wines of great elegance, freshness and a complex aromatic structure. The grapes, harvested by hand at the perfect degree of ripeness, are immediately soft-pressed. The first fermentation takes place in steel vats, and the base wines are blended only after careful analytical controls and organoleptic examinations to guarantee the high quality standards required by the winery. This is followed by the second fermentation in the bottle, which gives this Satèn a beautiful creaminess and delicacy. In the glass, the Satèn Pavò has a luminous straw colour crossed by minute and persistent bubbles. On the nose, strong notes of lemon peel mingle harmoniously with hints of ripe yellow fruit and dried flowers. To finish, a balsamic touch and a slight glazed nuance. In the mouth it is soft and enveloping, with a lively freshness that enhances its pleasantness. Perfect as an aperitif, it goes well with fish dishes. Try it, for example, with an octopus salad with potatoes and Garda black olives, shellfish and sushi.
