Produced entirely from Chardonnay grapes, hand-selected and harvested at the peak of their ripeness. Vinification follows the SoloUva Method, which uses self-produced grape must instead of external sugars. After the harvest, the grapes are gently pressed and fermented partly in steel tanks and partly (30%) in used wooden barrels. Maturation on the lees lasts at least 24 months.
