Leonia Pomino DOC Brut is an unexpected Tuscan excellence. A Classic Method sparkling wine, it is produced in the Castello Pomino vineyards, located between 500 and 700 metres above sea level, in a unique area characterised by clayey soils of Pliocene origin, poor in organic matter. This combination of altitude and soil composition gives the wine freshness and complexity. The particular denomination Pomino DOC, established in 1983, is known for the production of high quality wines, thanks to the introduction in Tuscany of international vines such as Chardonnay and Pinot Noir that have adapted perfectly to the local microclimate. Specifically, Leonia Brut is made from a blend of these two varieties, with a prevalence of Chardonnay and a small percentage of Pinot Noir. The grapes are harvested by hand during the coolest hours of the day, and in the cellar they undergo a slow and delicate pressing to extract only the free-run juice. Fermentation takes place in temperature-controlled stainless steel tanks, with part of the must fermented in wood to add complexity. After blending the cuvée, the wine referments in the bottle and ages on the lees for 30 months, developing a creamy texture and a fine, persistent perlage. An extremely bright straw yellow with golden reflections, its bouquet is complex, with notes of citrus fruits such as grapefruit and orange peel, yellow fruits, white flowers and broom. There are also hints of sweet pastries and subtle notes of bread crust, together with mature notes of dried fruit and honey. In the mouth it is creamy and enveloping, with a freshness balanced by a pleasant flavour. The finish is long, accompanied by a persistent perlage that tickles the palate. To be served as an aperitif, on the table it is a good accompaniment to fish first and second courses, fried foods and fresh cheeses.
