    • Sensations Brilliant straw yellow in colour and with a fine and persistent perlage, this Millesimato 2017 offers an intense bouquet with aromas of citrus (citron), green tea and pleasant nuances of bread crust. In the mouth, it is fresh and vibrant, while showing good structure and complexity. A harmonious and savoury brut with a strong personality.
    • Vinification On receipt at the winery, further selection of the grapes on the vibrating table before soft pressing. Fermentation takes place in stainless steel at approximately 15- 16°C. This is followed by re-fermentation in the bottle. After drawing, the Brut matures for at least 36 months on the lees.

Mild winters, dry and windy summers with large temperature ranges between day and night.

    • Only a few years ago, if you asked an expert what he thought of the quality of Sicilian sparkling wines, you would probably have obtained a reaction of simple incredulity. Sicily, it was thought, was not a land suitable for the production of bubbles. Much less of the classic method. And yet, thanks to the efforts of far-sighted companies such as Donnafugata, today even the region of Sicily boasts a first-rate production of sparkling wines. In this case we are dealing with a classic method produced from the historic Contessa Entellina vineyards. Chardonnay and Pinot Noir grapes, harvested by hand and carefully selected first on the vine and then in the cellar, on a vibrating table, before soft pressing. Simple vinification of the base wines, after bottling Donnafugata's classic method rests on the lees for no less than 36 months, before disgorging and subsequent dosage. Brilliant straw yellow in colour, this bubbly presents a fine and persistent perlage. The 2017 vintage, in particular, offers an intense bouquet, with aromas of sweet citrus fruits such as citron, green tea and bread crust. On the palate, however, it is fresh and vibrant, demonstrating both good structure and complexity. It is a harmonious and savoury Brut with a strong personality.
