Only a few years ago, if you asked an expert what he thought of the quality of Sicilian sparkling wines, you would probably have obtained a reaction of simple incredulity. Chardonnay and Pinot Noir grapes, harvested by hand and carefully selected first on the vine and then in the cellar, on a vibrating table, before soft pressing. Simple vinification of the base wines, after bottling Donnafugata's classic method rests on the lees for no less than 36 months, before disgorging and subsequent dosage. Brilliant straw yellow in colour, this bubbly presents a fine and persistent perlage. The 2017 vintage, in particular, offers an intense bouquet, with aromas of sweet citrus fruits such as citron, green tea and bread crust. On the palate, however, it is fresh and vibrant, demonstrating both good structure and complexity. It is a harmonious and savoury Brut with a strong personality.
