  • What could be more fun than surprising a friend with an unexpectedly good bubbly. Well, this is the bottle that we must undoubtedly have in the refrigerator ready for every occasion. Peculiar not so much because of its French origin, we would miss it, but because its base is made up 90 percent of a decidedly unusual grape variety, Mauzac, a white berry planted mainly in southwestern France. Grown just north of the Pyrenees, this variety takes its name from a village near Toulouse. Also known as Blanquette, this grape variety proves to be extremely versatile, suitable for a thousand interpretations. In this case it is aided by 5 percent Chardonnay and Chenin Blanc, respectively, and is processed in the bottle, following the traditional method, remaining in contact with the yeasts for about 15 months. This reveals a delicate sparkling wine suitable both as an aperitif and in combination with simple but tasty dishes, with a decidedly surprising character and personality. To be offered, for example, with a nice fish fry. Success is simply guaranteed.

    Maison Salasar was founded in 1890 in Campagne-sur-Aude, Haute-Vallée. Its vineyards cover 60 hectares of surface area within the AOC, the French appellation, Blanquette and Cremant de Limoux. We are in the South of France, not too far from the Mediterranean Sea. The winery's vineyards are located, however, between 300 and 500 meters above sea level, in the foothills of the Pyrenees, thus benefiting from a climate that is simply ideal for producing quality grapes.
