  • Sensations The view reveals a beautiful bright ruby colour. Intense, the nose mixes fragrances of candied orange peel and rose buds with subtle notes of ganache. In the mouth, it is broad and silky, seducing with its freshness and aromatic complexity. The finish is persistent, with aromas of small acid fruits and rose petals.
  • Vinification Harvesting is exclusively by hand and only on selected bunches. Vinification is carried out in cement tanks. The grapes are destemmed and the period in the vats lasts about 3 weeks, in order to polymerise the tannins. Only the ‘free must’ is used for the production of this wine. Aged in vats for between 14 and 16 months.

  • Croix De Bois by M. Chapoutier belongs to the prestigious ‘appellation’ Châteauneuf-du-Pape. A biodynamic wine, this Rhone red comes from a pure processing of Grenache grapes.Châteauneuf-du-Pape is one of the most renowned appellations in the Rhone area. We are in the South of France, where the climate is warm and dry, although deeply influenced by the Mistral, a cold wind blowing from the north. The soil is one of the distinctive elements of the area: composed mainly of large quartzite pebbles and sandy red clays, it is able to absorb heat during the day and release it slowly during the night. This natural phenomenon allows the grapes to reach optimal ripeness. Grenache, an emblematic grape variety of the southern Rhône, is known for its ability to produce rich, opulent wines. In this case, the grapes are harvested by hand with rigorous selection to ensure that only the best bunches, at the perfect point of ripeness, reach the cellar for processing. Here, the grapes are completely destemmed and fermented in cement tanks. Fermentation lasts about three weeks, a period sufficient to allow the complete extraction of the tannins, which gives the wine its characteristic structure. The wine is then matured in vats for a period of 14-16 months. Deep red in colour, the nose reveals an explosion of black fruit aromas, with blackberry jam in evidence, accompanied by delicate notes of crushed strawberries and rose petals. In the mouth it is broad and enveloping, with soft tannins and a velvety texture. As the minutes pass, notes of ripe fruit and a touch of sweet spices emerge.
