Chateau Fleu Cardinale, 48 Chemin de Champy, 33330 Saint-Étienne-de-Lisse, Francia
A sensory journey to the heart of the Bordeaux wine region. This is the home of Château Croix Cardinale, a Saint-Émilion Grand Cru that is a fine example of the excellent red wines produced in this region. Saint-Émilion, it is worth remembering, is one of the most famous appellations of Bordeaux, known for its millenary history and its wine-producing landscapes, recognised as a UNESCO World Heritage Site. The area is characterised by a variety of soils, among which the limestone and loam soils typical of the estate stand out, ideal for growing high quality grapes. An interesting anecdote concerns the origin of the name Saint-Émilion: it is said to derive from a Breton monk named Émilion, who in the 8th century retired to this region, giving impetus to the local wine tradition. Château Croix Cardinale is a blend of over 80% Merlot and Cabernet Franc. The grapes are harvested by hand and placed in small boxes, with a rigorous selection of the grapes directly in the vineyard. After de-stemming, the grapes undergo a selection process based on density and a further manual check. The entire vinification process is carried out using gravity and there is also a short pre-fermentation maceration phase under bioprotection. The vinification takes place in 20 500-litre barrels, with extraction by pumping over and gentle maceration. The subsequent ageing lasts between 12 and 14 months, dividing the mass between French oak barriques (45% new, 20% first use), demi-muids, 30-hectolitre foudres and amphorae. Visually, the wine is an intense ruby red. The nose is fruity and floral, with subtle notes of sweet spices. In the mouth it is fresh and balanced, with soft and velvety tannins that lead to a persistent and harmonious finish. This red wine with great character goes well with meat dishes such as grilled beef fillet, roast lamb or game. Also ideal with mature cheeses and mushroom-based dishes.
Château Croix Cardinale is a beautiful winery located in the prestigious Saint-Émilion appellation in Bordeaux. Founded in 2012 by the Decoster family, who already owned the nearby Château Fleur Cardinale, the estate covers an area of 4.5 hectares. In the vineyard, a combination of grape varieties, including Merlot, Cabernet Franc and Cabernet Sauvignon, benefit from clay-limestone soils that are ideal for quality viticulture. The Decoster family has a fascinating history: before devoting themselves to viticulture, they were the owners of the famous Haviland porcelain factory in Limoges. In 2001, Dominique and Florence Decoster decided to embark on a new adventure in the world of wine, acquiring Château Fleur Cardinale. Thanks to their commitment and passion, the estate was promoted to the rank of Grand Cru Classé in 2006. Then, in 2012, they expanded their presence in the region by purchasing Château Croix Cardinale, with the aim of further expressing the diversity and richness of the Saint-Émilion terroir. A distinctive aspect of Château Croix Cardinale is the eco-responsible approach adopted in the management of the vineyard and in the production of the wine. The Decoster family has invested significantly in restructuring the facilities and modernising the winemaking techniques, with a particular focus on environmental sustainability. This commitment is reflected in the quality of the wines produced, which are appreciated for their elegance and complexity.
