      Château La Dominique Grand Cru Classé Saint-Émilion 2021
    • Saint-Émilion is located in the north-west of the Bordeaux region. Here Château La Dominique can now count on 29 hectares of vineyards bordering some of the most renowned wine estates, including Château Cheval Blanc, Figeac, La Conseillante and L'Évangile. This privileged position, on the border with the Pomerol appellation, allows the estate to benefit from an exceptional terroir, characterised by clayey-gravelly, clayey-calcareous and sandy soils on a clayey subsoil. Château La Dominique produces its Grand Cru Classé from a blend of Merlot (85%), Cabernet Franc (12%) and Cabernet Sauvignon (3%). The grapes are harvested by hand and placed in small crates, ensuring that the bunches are carefully selected. Vinification takes place in truncated cone-shaped thermo-regulated vats that allow precise control of fermentation temperatures. The wine is then aged for 14 months in French oak barriques, 50% of which are new, 40% are used once before use, and the remaining 10% are innovative ovoid containers, amphorae and wine globes. Château La Dominique has a bouquet that combines floral fragrances and ripe black fruits. In the mouth it offers a balance between freshness and fruitiness, with dense and delicate tannins and a pleasant persistence. This wine has an ageing potential of about 15 years. In any case, once uncorked it should be paired with meat dishes, such as roast beef, lamb or game.

      Château La Dominique is located in the heart of the Saint-Émilion appellation, on the border with Pomerol. It is a wine estate with a long history dating back to the 16th century. Acquired in 1969 by Clément Fayat, the vineyard has been the subject of continuous improvements and innovations, consolidating its reputation as a Grand Cru Classé. It covers 29 hectares of clay-gravel, clay-limestone and sandy soils on a clay subsoil. This diversity of soils, combined with its proximity to Château Cheval Blanc, Figeac, L'Évangile and La Conseillante, contributes to the production of elegant and complex wines. In 2014, thanks to the work of architect Jean Nouvel, a state-of-the-art winery with a distinctive red facade was inaugurated. This space houses both the winemaking areas and a panoramic terrace, home to the restaurant ‘La Terrasse Rouge’, which offers a breathtaking view of the surrounding vineyards. The winery benefits from the valuable support of oenological consultant Michel Rolland. Its annual production is around 80,000 bottles.
