A small biodynamic masterpiece. From the heart of the Margaux district, in Haut-Médoc, Château Durfort-Vivens offers this 2ème Cru Classé, a red that is particularly representative of the winery's production. Margaux is characterised by a unique microclimate, influenced by the proximity of the Atlantic Ocean. Sunny days and cool nights create an ideal environment for the ripening of the grapes, in particular Cabernet Sauvignon, which accounts for around 97% of the blend and finds its finest expression here. Harvest and vinification take place by parcel, enhancing the unique characteristics of each vineyard. Alcoholic fermentation takes place with natural yeasts and daily pumping over to favour delicate extractions. Malolactic fermentation completes the process, giving the wine softness and complexity. The wine then matures for approximately 18 months in new barrels (70%) and terracotta amphorae (30%), giving the wine structure and longevity. Intense ruby red in colour, the nose has a complex and elegant bouquet, where notes of blackberry, blueberry, blackcurrant and bark intertwine. In the mouth, it is full and layered, with fine, velvety tannins that help give the wine structure and persistence. In the mouth, an explosion of flavours ranging from ripe fruit and spices to mineral notes and touches of liquorice. Perfect with important red meat dishes, such as roasts and braised meats. Also ideal with mature cheeses.
