Food pairings: Orecchiette al sugo with horse meat rolls, stuffed aubergines, roast lamb with potatoes, semi-matured caciocavallo podolico cheese.
    • Vinification The grapes, freshly picked, are taken to the cellar for selection of the bunches and subsequent crushing and destemming. A pre-fermentation maceration is then carried out at a controlled temperature for 24/48 hours, then the must is left to ferment in steel for 7/10 days, again at a controlled temperature. After racking, the wine undergoes malolactic fermentation and is then bottled. After a few months in the bottle, it is put on the market.

    • Produced from indigenous grapes, Castel del Monte DOP Rosso by CRIFO is a tribute to the Nero di Troia vine, in this case flanked by 30% of ‘other black grapes’ typical of the area. The Castel del Monte denomination is synonymous with quality and wine tradition, thanks also to a particularly favourable terroir. It originates on the first hilly slopes of the Murgia, north-east of Ruvo di Puglia, about 400 metres above sea level. This area is characterised by marly, slightly clayey soil, enriched with sand of karstic origin, which contributes to giving the wines a special structure and complexity. The hilly exposure, combined with the breeze coming from the Adriatic, creates an ideal microclimate for the ripening of the grapes, favouring the development of intense aromas and a distinctive freshness. The vineyards, cultivated using the traditional Apulian pergola system, benefit from good sun exposure, allowing the grapes to reach optimal ripeness while maintaining a balanced freshness and acidity. As soon as the grapes are harvested, they are immediately transported to the cellar where the best bunches are carefully selected and then destemmed. Pre-fermentation maceration then takes place at a controlled temperature for 24/48 hours, followed by fermentation in steel. This step allows the aromas to be extracted from the skins in the best possible way, keeping the aromas and colour lively. The wine then continues with malolactic fermentation, which gives it softness and roundness. After a short bottle ageing, the wine is ready to be enjoyed, revealing a young and lively character. A lively ruby colour, enriched with violet hues, the nose reveals intense aromas of blackberries and plums, with a hint of violets emerging delicately in the background. In the mouth, the taste is full-bodied, dominated by ripe, well-integrated tannins. The finish is pleasantly fruity, with returns of ripe fruit that enhance its persistence and complexity. An ideal companion for typical Apulian dishes, it goes well with classic orecchiette al sugo, stuffed aubergines and roast lamb with potatoes. It is also excellent with semi-mature cheeses.

Its foundation dates back to 1960, when 28 winegrowers decided to unite to improve their bargaining power in the sale of grapes, which were often bought by large national groups. This union marked the beginning of a path of growth and transformation that, over the years, has led the Cooperative to evolve from a simple producer of musts to a winery capable of producing high quality bottled wines. In this journey, 2010 represents a milestone. That year saw the inauguration of a new winemaking facility, designed to process native Apulian varieties. The winery's vineyards cover an area that encompasses the provinces of Bari and Barletta-Andria-Trani, in the heart of Apulia. The proximity of the sea offers an ideal microclimate for viticulture, thanks to the sea breezes that mitigate the high summer temperatures typical of the area. The vineyards are cultivated using various traditional techniques, including the alberello and the Apulian pergola. Among the vines grown are the main indigenous varieties, such as Nero di Troia, Primitivo and Bombino Bianco. The historical name of the cooperative, Cantina della Riforma Fondiaria, is the basis of the acronym CRIFO, by which the Cantina's wines have always been known. Today, the Cantina can count on the cooperation of more than 400 members who guarantee an annual production of more than 8,000 tonnes of grapes.
