  • Sensations Deep, impenetrable ruby red colour. Its exuberant character reveals an unparalleled olfactory intensity. Red roses and potpourri, fruit in spirit and boer, cloves, cinnamon and cinchona, menthol and aromatic tobacco. On the palate, the alcohol and velvety tannin texture balance an intense freshness, passe-partout for a long life in the bottle. It closes long on balsamic and toasted notes. Food pairings: Cavatelli with lamb ragout, tripe with potatoes, braciole with horse gravy, baked sausage with cherry tomatoes, marro.
  • Vinification The grapes, freshly harvested from vineyards over 30 years old, are brought to the winery for careful selection of the bunches and subsequent crushing and destemming. A pre-fermentation maceration is then carried out at 12°, then the must is left to ferment in steel for 10/15 days at 23°. It is then softly pressed and malolactic fermentation takes place in steel. The wine is aged for 12 months in wood, partly in second passage barriques and partly in large 80hl casks. After bottling, it spends a further 6 months in glass before being put on the market.

  • With this Castel del Monte Riserva DOCG Augustale, CRIFO brings the best of Apulian winemaking tradition to our cellars and tables. Produced with pure Nero di Troia grapes, a historical vine and symbol of the territory, this important red wine is born on the limestone hills of the Alta Murgia, east of Ruvo di Puglia. An area renowned for its vocation for high quality viticulture. The vines, trained by spurred cordon with a density of 4,000 vines per hectare, are over 30 years old. So they produce few bunches... but of very high quality. After manual harvesting, the grapes are immediately taken to the cellar for meticulous selection of the bunches. Pre-fermentation maceration at a low temperature enhances the primary aromas of the vine and is followed by alcoholic fermentation in steel, which lasts between 10 and 15 days. This is followed by soft pressing and malolactic fermentation, also carried out in steel, to soften the wine and reduce its acidity. The subsequent ageing is a long and complex process. For 12 months, the wine rests in wood, divided between second-passage barriques and large 80-hectolitre barrels. This passage enriches it with woody notes, increasing its complexity and pleasantness. Finally, a further 6 months of bottle ageing is foreseen to allow the wine to reach a perfect balance before being marketed. Deep ruby red, almost impenetrable, the colour anticipates its complexity. The nose reveals a rich and varied bouquet, with notes of red roses, potpourri and fruit under spirits mingling harmoniously with spicy hints of cloves, cinnamon and cinchona, and balsamic tones of menthol and aromatic tobacco. In the mouth it is warm and structured, with velvety tannins and a pleasant freshness to balance it all. The finish is long and persistent, with toasty and balsamic notes that invite you to take another sip. As far as food pairings are concerned, this Castel del Monte Riserva is at its best with rich, structured dishes typical of Apulian tradition.     The Cantina di Ruvo di Puglia is a fine example of cooperation that works and brings value to its territory. Its foundation dates back to 1960, when 28 winegrowers decided to unite to improve their bargaining power in the sale of grapes, which were often bought by large national groups. This union marked the beginning of a path of growth and transformation that, over the years, has led the Cooperative to evolve from a simple producer of musts to a winery capable of producing high quality bottled wines. In this journey, 2010 represents a milestone. That year saw the inauguration of a new winemaking facility, designed to process native Apulian varieties. The winery's vineyards cover an area that encompasses the provinces of Bari and Barletta-Andria-Trani, in the heart of Apulia. The proximity of the sea offers an ideal microclimate for viticulture, thanks to the sea breezes that mitigate the high summer temperatures typical of the area. The vineyards are cultivated using various traditional techniques, including the alberello and the Apulian pergola. Among the vines grown are the main indigenous varieties, such as Nero di Troia, Primitivo and Bombino Bianco. The historical name of the cooperative, Cantina della Riforma Fondiaria, is the basis of the acronym CRIFO, by which the Cantina's wines have always been known. Today, the Cantina can count on the cooperation of more than 400 members who guarantee an annual production of more than 8,000 tonnes of grapes.
