    • Perhaps it is because Salento is a land kissed by the sun for several months of the year. Perhaps it is because the quality of its indigenous grape varieties is now recognised globally. Or it could be more simply because this Negroamaro di Terra d'Otranto, proposed by Notte Rossa, is indisputably a good wine. It does not matter why. All that matters is the fact that this Apulian-made red wine has everything it takes to give great satisfaction to those who taste it. The grapes come from suitable vineyards, planted on red soils, in a warm, low rainfall environment. Here the temperature range between day and night is high and the grapes reach full ripeness loaded with sugars, aromas and colour. Notte Rossa's oenologists subject the grapes to careful processing, long skin contact and temperature-controlled fermentation. After processing, the wine then matures for 6 months in French oak barriques. A deep purple red, Negroamaro di Terra d'Otranto immediately reveals a complex and intriguing bouquet of spices, berries and jam. In the mouth, however, it reveals a nice body, a soft and harmonious sip, with well-integrated tannins. It definitely requires a high level of pairing, with savoury dishes of red meat or game. Also try it with a board of medium-aged cheeses.

In the heart of Salento, the land of great wines, and more precisely in the locality of San Marzano is the Notte Rossa winery. Here the vineyards are those of Primitivo di Manduria from which wines of great personality are obtained. The company vineyards are located in the most vocated areas of the Salento peninsula. Hectares of vineyards, mainly with indigenous grapes, arranged in different plots enjoying different exposures and soils. The white grapes come from the hilly, clayey areas in the north of Taranto, i.e. in the upper Salento, at about 150 metres above sea level. For the reds, such as Primitivo and Negroamaro, the choice falls on plots in the agri located further south, areas of red earth, limestone and sand, where the old sapling vines have coexisted for decades with the shrubs of the Mediterranean maquis.
