Salento IGP, Eloquenzia is a 100% Salento red wine, offered here by the Garofano winery. We are located in the heart of the Salento plain, an area rich in history and winegrowing tradition, stretching across expanses of vineyards, centuries-old olive trees and dry stone walls. The star of this label is Negroamaro, an indigenous variety that has dominated the vineyards of Salento for centuries, known for its versatility and ability to produce wines that can be fresh and fruity or full-bodied and long-lived. Harvested when perfectly ripe, this variety guarantees an excellent balance between acidity and sweetness. In the cellar, after soft pressing, the must is fermented at a controlled temperature in steel. This is followed by ageing, again in steel, which preserves the freshness and integrity of the initial fruit. In the glass Eloquenzia has a fascinating intense ruby red colour. The nose is complex, with notes of sweet leather, spices and ripe cherries, which combine to form a harmonious and elegant whole. In the mouth, however, it is soft and fresh, with a balanced structure and silky tannins. Finally, the finish is long and pleasant. It is perfect to accompany a variety of Mediterranean dishes.
