    • Today we are in the sunny lands of Salento. Here a generous sun caresses the vineyards and a gentle breeze from the sea helps to lower the temperatures during the hot summer days. This is the birthplace of Cappello di Prete, a pure Negroamaro produced by Candido Wines. To be precise, we are in San Donaci, in the province of Brindisi, where the winery has vineyards cultivated with care and dedication. The base is pure Negroamaro, an indigenous variety of Salento, characterised by compact bunches with berries covered by a thick skin. Once in the winery, the grapes are destemmed and gently crushed. They then macerate for a long time in steel to extract colour and aromas. Malolactic fermentation follows, which gives the wine softness and complexity. Ageing takes place in oak barrels for a period of 12 months, allowing the wine to develop elegance and harmony. In the glass, Cappello di Prete presents an intense ruby red colour with garnet reflections. On the nose, a complex and enveloping bouquet, where notes of spices, liquorice and tobacco intertwine with hints of ripe fruit, such as blackberry and plum. In the mouth, however, it conquers with its decisive structure and character. Elegant and well-integrated tannins support a rich and persistent body, giving a long and satisfying sip, with a spicy and persistent finish. Undoubtedly to be served with savoury red meat dishes. Excellent with roasts, braised meats and Florentine steaks. Also not to be overlooked is the pairing with mature cheeses.

      In the heart of Apulia, Candido Wines has been a family-run winery for three generations. And more precisely since 1929, when the Candido family wisely transformed the fruits of their land into fine wines, an authentic expression of the Apulian territory and tradition. That year Francesco Candido laid the first stones of what was to become a small oenological jewel. In San Donaci, surrounded by his own vineyards, he built a wine factory to process the grapes. The first wines were sold loose, but already in 1957 Candido's far-sightedness prompted him to start bottling, directly enhancing the products of his land. Then, in 1997, a new chapter opened with the acquisition of the Guagnano cellar. This was destined for the processing of grapes, while the San Donaci cellar took on the role of centre for the ageing, bottling and marketing of wines. Today, Alessandro Candido, representing the third generation, leads the company with passion and competence. The values handed down through the ages are combined with a modern and innovative approach, resulting in wines that win with elegance, complexity and character. Biodiversity reigns in the Candido vineyards. Alongside indigenous Apulian grape varieties such as Aleatico, Negro Amaro, Primitivo, Malvasia Nera and Fiano, there is also room for international varieties such as Montepulciano, Cabernet Sauvignon, Merlot, Syrah and Petit Verdot. This choice reflects the winery's desire to valorise the terroir, while being open to new challenges and experimentation.
