A wine representative of the territory, a pure Negroamaro. Today, as then, the best bunches harvested in the second half of September are dedicated to this wine. Harvesting is strictly manual. The grapes are then taken to the cellar where they are destemmed and pressed. This is followed by maceration and alcoholic fermentation that lasts for about 10-12 days, always at controlled temperatures. At the end of the transformation, the wine matures only in steel, before being bottled. Ruby red in colour, the nose of this red wine reveals intriguing notes of red fruits and hints of spices. In the mouth, however, it reveals a pleasantly structured wine that is soft and well balanced in all its components. This is the wine to drink when the menu is one of tradition, with dishes characterised by decisive flavours, with red and well-seasoned sauces, medium and mature cheeses but above all grilled red meats.
