This Rosso Salento IGP is a young, fresh wine made from a blend of red grapes typical of the Salento region, including Negroamaro, Primitivo and Malvasia Nera. The grapes come from vineyards located on the hills of Salento, where the warm, temperate climate and limestone-clay soils favour a balanced ripening rich in aromas. Vinification follows a modern process designed to enhance the wine's fruity and fresh characteristics. As soon as they reach the winery, the grapes are destemmed and gently crushed. A thermo-controlled maceration phase of about 10 days follows, during which alcoholic fermentation with selected yeasts takes place. The wine then matures in steel for a few months before being bottled. Intense and fruity, the nose has a broad bouquet, characterised by notes of fresh red fruit, such as cherry, plum and blackberry, with hints of flowers and spices. In the mouth, however, it is well structured, balanced and fresh, with soft tannins and a pleasant acidity that makes it easy to drink. The finish is persistent, with fruity and mineral notes. To be drunk young to appreciate its freshness and fruity aromas, it is perfect with first courses with meat sauces, red and white meat main courses, cured meats and cheeses.
