Grapes are harvested by hand, early in the morning to keep them fresh, carefully selected and placed in small crates to limit crushing. Once in the winery, the clusters are gently pressed and the resulting musts are sent to a stainless steel, thermoregulated tank for cold settling and subsequent fermentation. The Roussanne grapes, and some of the Grenache, on the other hand, ferment in barrels, giving the finished wine a note all its own. After processing is complete, part of the wine matures in barrels for about 8 months. This is followed by blending and bottling. Pale gold color with crystal green reflections, the nose shows great complexity, including white fruit, exotic fruit, grapefruit and small flowers. In the mouth it is mineral and elegant, with refreshing citrus notes. A particular saline note also makes it particularly elegant.
