A red wine produced by Château Pavie, a beautiful estate in Saint-Émilion, Esprit de Pavie truly represents its territory. The grapes used to produce this wine come from a wide variety of terroirs, on hills facing south in the Dordogne valley. This diversity of soils allows the vines to best express the characteristics of the territory, giving life to a balanced wine, rich in nuances. Appellation d'Origine Contrôlée (AOC) Bordeaux, is a blend of 65% Merlot, 20% Cabernet Franc and 15% Cabernet Sauvignon. Alcoholic fermentation takes place naturally in temperature-controlled vats. After a few weeks of maceration, malolactic fermentation takes place in the same vats. The wine is then aged for 15 months in previously used barriques, ensuring a harmonious integration of flavours without the wood overpowering the fruity characteristics of the wine. Esprit de Pavie has an intense purple colour with violet reflections. The nose is characterised by aromas of ripe red fruits, such as cherries and raspberries, accompanied by subtle spicy notes. On the palate, the attack is soft and round, with a pleasant freshness. The tannic structure is well balanced and offers a velvety sensation. The lovely persistence invites you to take the next sip. It goes well with meat-based dishes. It's ideal with roast beef, roast lamb or grilled duck, but also goes well with mature cheeses and traditional Italian dishes, such as lasagne with meat sauce or ossobuco with risotto.
