    • Saint-Estèphe is a wine-growing area located in the Médoc region in the northern part of Bordeaux. Together with Pauillac, Saint-Julien and Margaux, Saint-Estèphe is appreciated worldwide for the quality of the red wines produced, which are among the most renowned and sought-after in the world. The soils here are rich in gravel, sand and clay and give the wines a powerful structure. A fine example is this Château de Pez Saint-Estèphe AOC, which is made from equal parts Cabernet Sauvignon and Merlot grapes, with small additions of Cabernet Franc and Petit Verdot to complete the blend. The grapes are harvested by hand when they reach perfect ripeness and are stored divided by parcel in order to be processed individually. Vinification in temperature-controlled wooden and stainless steel vats. After racking, 10% press wine is added to the mass. Then the entire mass is passed into barriques for the delicate maturation phase. In this case, no less than 12 months are spent in approximately 33% new barrels. Ruby red with garnet highlights, the nose of this Bordeaux reveals classic aromas of blackcurrants, tobacco and graphite, with a touch of sweet spices and pepper. In the mouth, however, it reveals itself to be a wine characterised by a medium body, with silky and finely integrated tannins. Precise and structured, it surprises with its pleasant minerality. To be served, while still young or after several years of maturation, with an all-meat menu. Also excellent with medium-aged cheeses.

      The area is that of Saint-Estèphe, in the heart of the Bordeaux appellation. We are talking about Château de Pez, a historic winery that, since 1995, has belonged to the universe of wineries that belong to Maison Louis Roederer. Founded in the 15th century, the château is one of the oldest in the appellation. Today, it can count on a vineyard surface area of around 35 hectares, with excellent exposures and well-rooted plants on exceptional soils. The vineyard is divided between the typical varieties of the region, with a predominance of Cabernet Sauvignon and Merlot, plus small plots of Cabernet Franc and Petit Verdot.
