Château Ormes de Pez, one of the fine production realities of the Saint-Estèphe region, proposes this excellent red wine, the product of the processing of the grape varieties typical of the Bordeaux region. In the 'recipe' of this red, therefore, the majority share is reserved for Merlot, which alone covers more than half of the blend. Then Cabernet Sauvignon, in a quantity of around 38% of the total, Cabernet Franc and Petit Verdot in small percentages to complete the picture. Super careful vinification, as per tradition, the different wines are matured separately in oak barrels. Only on the eve of bottling does the winemaker make up the blend and, after assembling the entire mass in a tank, the wine is bottled. Compact ruby red, with garnet reflections, this young Saint-Estèphe immediately reveals a bouquet of beautiful complexity. On the nose, in particular, notes of bitter chocolate, blackberries, mint and tobacco leaves. In the mouth, however, it is compact and linear. Medium-bodied and with very fine tannins, this Bordeaux red still reveals great vitality, evidenced by a nice pungent acidity. Good today, it has no fear of spending a few years in the cellar. We will always find it ready to accompany a menu mainly based on red meat, even grilled.
