Pauillac is a wine region of great prestige, a land of high quality red wines. This is due to an exceptional terroir and the predominant use of Cabernet Sauvignon, which finds an ideal habitat here on predominantly gravelly soils. In addition, Pauillac is home to several prestigious châteaus, including Château Haut-Bages Libéral, which each year produces wines with a complex aromatic profile and a remarkable capacity for ageing. In this case, the basic blend consists of 72% Cabernet Sauvignon and Merlot for the remainder. Vinification is carried out in a parcelled and individualised manner, and is characterised by frequent pumping over to extract colour and tannins and a particularly soft vertical pressing. After processing, the wine matures for about 16 months, divided between barriques and amphorae. Freshness, power and elegance are the key words of Château Haut-Bages Libéral. Intense ruby red in colour, the nose reveals a broad bouquet with clear notes of red and dark fruit, accompanied by hints of undergrowth and hints of liquorice and vanilla, due to the ageing in wood. In the mouth it is enveloping and balanced, characterised by ripe and silky tannins, with lovely mineral and spicy notes. The finish is also long and pleasant, prolonging the pleasure of each sip for several seconds. Good today, this Pauillac is certainly in no hurry to be uncorked. For a few years, it will be able to evolve in the bottle, waiting for the evening to be the right one. An all-meat menu, with tasty dishes and a slightly spicy character.
At the beginning of the 18th century, Château Haut-Bages Libéral belonged to the Libéral family, fine connoisseurs of the Bordeaux region who, over time, brought together the best terroirs of Pauillac. Then, in 1983, this Grand Cru of Pauillac changed hands, being acquired by the Villars family. They are credited with investing in the renovation of the winery, restoring the Château to its former glory. In the meantime, the winemaking processes and vineyard management have been redesigned in a modern key, now oriented towards more sustainable methods.
