  • Sensations Ruby-coloured wine. The nose is broad and complex, with aromas of red fruits, herbaceous and spicy notes. On the palate it is enveloping, with well-integrated tannins and a long persistence.
  • Vinification Traditional in style without losing sight of contemporaneity. Warm yet fine and pulsating with fruit like a breath of Mistral. After partial destemming, the grapes are pressed and the must vinified in cement vats, where malolactic fermentation also takes place. After the final blending, the wine continues to mature in vats of different materials and sizes: 70% in large vats (60 years old), 20% in cement vats and 10% in old barrels.

  • Châteauneuf-du-Pape AOC by Clos du Mont-Olivet is a son of the Rhone Valley, a wine of beautiful personality, power and complexity. The territory of Châteauneuf-du-Pape is characterised by a warm, Mediterranean climate, limestone and sandy soils. An ideal terroir for the cultivation of red grapes such as Grenache, Syrah, Mourvèdre and Cinsault, used for the production of this AOC red wine. Traditional vinification, starting with partial destemming of the grapes and fermentation in cement vats. This is followed by malolactic fermentation and a 12-month maturation in vats of different sizes: some large 60-year-old oak vats, concrete vats and old barrels. This process gives the wine a beautiful complexity and well-integrated tannins. In the glass it has a beautiful intense ruby colour. On the nose, the aromas recall red fruits, herbaceous and spicy notes, with hints of black pepper, liquorice and clove. In the mouth it is enveloping and powerful, with velvety tannins and a long persistence. A meditation wine, it goes well with red meat dishes, game and mature cheeses. Ideal with long cooked meats, braised and stewed dishes.
