Castelsina, a fine cooperative in Tuscany, presents here a red wine with an exquisitely regional character. A fascinating Toscana IGT that captures the essence of a wine region of unparalleled value. Let us start with the blend, composed in this case of Sangiovese (75 per cent), which provides the backbone of the wine, Merlot (10 per cent), Cabernet (5 per cent) and the indigenous varieties Canaiolo and Colorino, both at 5 per cent. This combination gives the finished wine a beautiful complexity. After harvesting, the grapes are brought to the winery to be carefully destemmed. The must ferments in temperature-controlled stainless steel tanks, remaining in contact with the skins for about 10 days. This process allows the extraction of colour, tannins and aromas. After racking and malolactic fermentation, the wine matures in steel tanks. In the glass it has a beautiful, bright and intense red colour. The nose offers balanced aromas of ripe red fruits and floral notes. In the mouth, however, it is a refreshingly fruity experience. Its beautifully balanced structure makes it pleasant and persistent. Perfect to accompany a variety of dishes, it goes well with hors d'oeuvres of cured meats, simple first courses, white meats and fresh cheeses. Castelsina represents a wine culture that is both innovative and respectful of Tuscan tradition. Founded in 1971, the Cantina Cooperativa brings together about 250 wine growers whose vineyards cover an area of about 400 hectares in the provinces of Siena and Arezzo. To support its members, the winery adopts a careful vineyard consulting activity. The effort is important but necessary in order to obtain an ever higher quality production while maintaining a strong bond with the territory. The vines cultivated are mainly typical ones, with Sangiovese, Canaiolo, Colorino, Trebbiano Toscano and Malvasia Bianca. These have been joined in recent years by Merlot, Cabernet and Vermentino.
