Called Ripa delle Mandorle, it is a Toscana IGT red wine from Castello Vicchiomaggio. An intriguing combination of Tuscan winemaking tradition and a modern approach to winemaking. This wine is made from Sangiovese and Cabernet Sauvignon grapes, resulting in a versatile and pleasant to drink label. All grapes come from vineyards located in Tuscany, where the Mediterranean climate, clay-limestone soils and hilly altitude give the fruit the ideal characteristics to create a wine of great structure and complexity. After harvesting, the grapes are destemmed and gently crushed. Fermentation takes place in stainless steel at a controlled temperature, with maceration on the skins for about 15 days. This is followed by ageing for 6-7 months in oak barrels and a rest period in the bottle before release. Ripa delle Mandorle presents itself in the glass with a beautiful intense ruby red colour. The nose reveals a complex and enveloping bouquet, with hints of cherry and currant, violet, a hint of mint and spicy notes. In the mouth it is medium-bodied, with soft tannins and an intense flavour. A pleasant freshness accompanies a lingering, balsamic finish. From hors d'oeuvres with cured meats and cheeses to first courses with meat sauces, it is difficult to put this Tuscan red wine to the test. The origins of Castello Vicchiomaggio, initially called Vicchio dei Longobardi, date back to around 1400, as recorded on some ancient parchments still preserved today. We are on top of a hill that dominates the entire Greve Valley, about 18 kilometres from Florence. In its long and glorious history, many personalities have stayed at the Vicchiomaggio Castle, most notably Leonardo da Vinci, at the time when he painted his most famous masterpiece, the Mona Lisa. Today, John and Paola Matta are the owners of the castle. The estate covers about 140 hectares, of which 34 are planted with vines, 10 with olive trees, and the remainder is parkland. Sangiovese is the estate's most representative grape variety, a fundamental grape for the production of Chianti Classico. With it, however, Castello Vicchiomaggio also has other international grape varieties, such as Merlot and Cabernet Sauvignon. These varieties, in particular, are used for the production of IGT red wines.
