What we offer here is a wine of tradition, produced using an ancient process, in the heart of Tuscany, in Impruneta, to be precise. It is called Ricciotto, and it is a pure Sangiovese by Azienda Agricola Lanciola. Impruneta, located in the hills south of Florence, boasts a centuries-old winemaking tradition and a unique terroir, characterised by marl soils rich in minerals, a warm and sunny climate with significant temperature excursions. These exceptional pedoclimatic conditions create an ideal environment for the cultivation of Sangiovese, which finds its maximum expression here. The bunches of grapes, harvested by hand at the right degree of ripeness, are processed with the so-called Governo all'uso Toscano, which involves drying part of the grapes for about 10-15 days. This process concentrates the sugars and aromas, giving the wine greater structure, complexity and longevity. The remaining 80 per cent of the grapes ferment regularly, and before the end of fermentation, the dried mass is returned to the tank. This triggers a second slow fermentation that enriches the wine with glycerine, giving it softness and pleasantness. Ricciotto has a beautiful intense ruby red colour with garnet hues that herald a wine of great character. On the nose, a complex and elegant bouquet, where notes of spices, ripe red fruit, leather and liquorice stand out, intertwined with hints of violets and Mediterranean scrub. In the mouth, it surprises with its structure and harmony. A full and enveloping sip, dominated by well-integrated tannins and a lively acidity that gives freshness and persistence. The fruity flavours evolve into spicy and toasty notes, creating a long and satisfying finish. Ricciotto is a wine for the whole meal, which goes well with red meats, game and mature cheeses. Ideal for enhancing the flavours of traditional Tuscan cuisine.

We are in the 'Colli Fiorentini' area, in the heart of Chianti Classico.
