Ripa delle More, Toscana IGT, is one of the products of Castello Vicchiomaggio in Greve in Chianti. It is made from a blend of Sangiovese, Cabernet Sauvignon and Merlot, vinified in small stainless steel tanks to ensure maximum contact between the skins and the must. After fermentation and racking, the wine undergoes the so-called malolactic fermentation and a period of refinement of about two years in new French oak barriques from two different tonnellerie. After bottling, the wine remains in the cellar for a further 7 months before release. Born as an innovative wine, out of the box and outside the specifications, Ripa delle More is a red wine with a modern taste that does not forget its Tuscan territorial roots. The colour is an impenetrable ruby red. The nose reveals exuberant aromas, mainly balsamic and fruity, reminiscent of mint, blackcurrant and blueberry, but also evolves with hints of dark chocolate, vanilla and juniper. In the mouth it denotes fullness and great class. The tannins are well polished and blend with the fruity taste. The finish is long, with pleasant spicy notes. It goes well with elaborate meat dishes such as stews, braised meats and casseroles.
The origins of Vicchiomaggio Castle, initially called Vicchio dei Longobardi, date back to around 1400, as recorded on some ancient parchments still preserved today. We are on top of a hill that dominates the entire Greve Valley, about 18 kilometres from Florence. In its long and glorious history, many personalities have stayed at Castello Vicchiomaggio, including Leonardo da Vinci, who painted his most famous masterpiece, the Mona Lisa. Today John and Paola Matta are the owners of the castle. The estate covers about 140 hectares, of which 34 are planted with vines, 10 with olive trees, and the rest is parkland. Sangiovese is the estate's most representative grape variety, a fundamental grape for the production of Chianti Classico. With it, however, at Castello Vicchiomaggio there are also other international grape varieties, such as Merlot and Cabernet Sauvignon. These varieties, in particular, are used for the production of IGT red wines. A Mediterranean climate and typical soil rich in clay and large stones, the so-called Galestro, are the basic elements of the Castello's terroir.
