  • Vinification After an initial selection in the vineyard, a second selection of the grapes takes place in the cellar on the two sorting tables, ensuring that only the best grapes are chosen. At this point, the Sangiovese grapes are gently crushed and transferred to open 225L barriques, steel vats or 50HL wooden truncated conical vats, taking great care to keep each parcel separate from the others. Fermentation is carried out with indigenous yeasts with 3 manual pump-overs or punching-downs per day at peak fermentation times, and then gradually decreasing to 1 after about a week. Once fermentation is complete, the wine is transferred to barriques and wooden barrels, where malalolactic fermentation takes place and where it is aged for 18 months. Each parcel is aged separately before the final blend is decided.

    "Colore" Rosso Toscana IGT 2021
  • A pure Sangiovese from the hills of Fiesole. It is called Colore, and it is a Rosso IGT produced by Bibi Graetz, an unconventional winemaker. An authentic expression of the territory and of the Sangiovese vine. Fiesole, a few kilometres from Florence, offers a unique terroir for the cultivation of Sangiovese. The calcareous and clayey soil, rich in minerals, and the Mediterranean climate, with warm days and cool nights, create the ideal conditions for ripening the grapes. The vinification of this Colore follows a careful process. Each plot is vinified separately and the grapes, after careful selection in the vineyard and in the cellar, are gently crushed and fermented in open barriques and steel or wooden vats. Fermentation takes place with indigenous yeasts, with manual pumping over and punching down to extract colour and aromas. After fermentation, the wine matures in barriques for 18 months. On the nose, red flowers, spices and leather blend with notes of ripe fruit, creating an elegant and persistent bouquet. In the mouth it conquers with its firm structure and elegance. Fine, well-integrated tannins support a rich, persistent body, giving a long, satisfying sip with a spicy, lingering finish. It is a wonderful accompaniment to savoury red meats, roasts and braised meats. Also excellent with mature cheeses.
