From the hills surrounding Fiesole, in the heart of Tuscany, comes Testamatta Rosso, Toscana IGT signed by Bibi Graetz. A wine that comes from a rigorous selection of grapes and an artisanal production method that respects the fruit and terroir to the utmost. Vineyards located at an altitude of around 400 metres, thanks to a cool and breezy climate, with significant temperature swings between day and night, the grapes are able to reach perfect ripeness. 100% from Sangiovese, the symbolic Tuscan grape variety, this wine brings out the typical characteristics of the vine. After an initial selection in the vineyard, a second selection is made in the cellar on sorting tables. The grapes are then gently pressed and transferred to open barriques, steel or truncated conical wooden vats, where fermentation with indigenous yeasts takes place. Manual pumping over or punching down is carried out frequently during the peak phase of fermentation and gradually decreased during the process. Once fermentation is complete, the wine is matured in barriques and wooden barrels for 18 months. Each parcel is aged separately before being blended into the final blend. An elegant and complex wine, Testamatta Rosso offers a unique sensory experience. Its luminous ruby red colour anticipates a rich and nuanced bouquet, where red fruit intertwines with notes of tobacco, vanilla and spices.
