Casamatta is a Rosso IGT produced by Bibi Graetz. An unconventional winegrower, he harvests his best Sangiovese in the Fiesole area, a few kilometres from Florence. Here, the limestone and clay soils, rich in minerals, and the Mediterranean climate create ideal conditions for the ripening of quality grapes. A native Tuscan grape par excellence, the Sangiovese, after careful selection in the vineyard, is gently crushed and fermented in steel tanks for no more than a week. This choice preserves the freshness of the fruit and avoids an excessive extraction of tannins. After fermentation, the wine then matures in steel vats for 6 months before bottling. Intense ruby red colour with garnet hues, the nose offers a fine and dynamic bouquet, where notes of red fruits, such as ciliega and raspberry, intertwine with hints of violet flowers and sweet spices. In the mouth, however, it conquers with its freshness and drinkability. Fine, well-integrated tannins support a slender body, resulting in a long, satisfying sip with a lively, fruity finish.
