Mosaico, proposed here by Fattoria Casa di Terra, is a Tuscan red that encapsulates all the essence of the Bolgheri territory. The true soul of Bolgheri. Made from pure Merlot grapes from three plots located in different areas of the denomination, it is distinguished by its balance and complexity. The soil tends to be clayey with layers of gravel in depth, giving the wine a characteristic minerality. The Bolgheri climate, mild and temperate, with its sea breezes, completes the picture, giving the fruit perfumes and aromas. The grapes are harvested by hand, with care and attention. They are then vinified in temperature-controlled stainless steel tanks, while spontaneous malolactic fermentation takes place in second and third passage French oak barriques, where the wine then matures for about 12 months. Intense and deep ruby red, Mosaico surprises with its enveloping bouquet of red fruits, blackberry and raspberry compote. In the mouth, however, it is soft and velvety, with elegant tannins and a lingering finish. It is a wonderful accompaniment to long-cooked red meats, braised or stewed meats, as well as to medium and long-aged cheeses, such as pecorino or Parmesan 36 months.
