It is made from a classic Bordeaux blend of Cabernet Sauvignon (65%), Merlot (20%) and Cabernet Franc (15%). Here in Bolgheri, this all-international blend is almost a golden rule. The harvest, which is carried out strictly by hand in boxes, lasts almost a month, while waiting for all the grapes to reach perfect ripeness according to their natural life cycle. It begins in mid-September and continues unabated until the first half of October. Once in the cellar, the grapes are immediately subjected to careful processing, beginning with a phase of crushing and destemming, maceration and alcoholic fermentation. Each variety is processed separately while awaiting transfer to barriques where malolactic fermentation takes place. This is followed by a phase of refinement, always in barriques, mostly new, with about 20% of second and third passage. The whole process lasts about 18 months, followed by at least 12 months of refinement in the bottle. A fine red wine with character, this Bolgheri DOC is made to accompany with pleasure first courses dressed with meat sauces, or second courses of game and venison. Also excellent with simple cheeses of medium and long maturation.
Pasqualino Di Vaira, first in the family business and then together with his wife Lisa and son Dario, has been making wine in Bolgheri since the 1960s. Today Dario can count on almost 10 hectares of vineyards cultivated with infinite passion, some of which were already planted in 1998. In 2020, the winery was re-branded. And after more than 10 years of activity, Dario decides to leave the historical name of Agriturismo Eucaliptus and put his own signature on his hard work.
