It is hard to imagine a more international red than this. But, at the same time, a wine so deeply tied to its land of origin. That Tuscan coast, a destination for colourful summer tourism, where Sangiovese, for once, leaves room for vines of French origin. In this case, for example, Hydra, Bolgheri DOC proposed here by I Tirreni, is a typical Bordeaux blend. Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, in fact, are its base. Once in the cellar, the grapes are sent to vinification in steel tanks, with 15/20 maceration on the skins. After racking, the wine stays in steel for a few months and then completes its maturation process in French oak barriques. Intense ruby red with violet hues, on the nose it is easy to distinguish the varietal notes typical of Cabernet Sauvignon, well complemented by the fruitier and softer ones of Merlot. A wine with a fine structure, characterised by particularly fine tannins, it accompanies savoury dishes well on the table. Try it, for example, with first courses with game or wild boar sauces, but also with stewed meats and mature cheeses.
