    • Vinification Fermentation: in stainless steel tanks at a temperature of 26/28?C for 15 days conducted with indigenous yeasts naturally present on the grapes, spontaneous malolactic fermentation during refinement. Refinement: 6 months in second hand barriques and 3 months in bottles. This wine is bottled without being filtered or treated for clarification in order to preserve its integrity.

      "Principino" Toscana IGT 2021
    • The basic blend can only be that typical of the Bordeaux region (and Bolgheri). Specifically, it is made from 40% Merlot grapes to which Cabernet Franc and Cabernet Sauvignon are added in equal parts. For the rest, this is the estate's youngest wine, the one that most expresses the richness of the initial fruit. Matured in second hand barriques for a minimum of six months, it is bottled without being filtered or clarified. It is a risk that the company runs in order not to alter the aromatic picture of the finished wine in any way. A bet won several times over. To understand it, just uncork a bottle and watch it being poured into your glass. Intense ruby red in colour, it has a rich bouquet of aromas reminiscent of fresh fruit, with light hints of spice and pleasant floral notes. In the mouth the aromatic correspondence is practically perfect. Rich and juicy, it has satisfying tannins and is very pleasant. It's a wine that you won't struggle to pair with satisfaction. Just serve it, at the right temperature, not over 16 degrees, next to simple but tasty dishes. Excellent with meat, it also goes well with cold meats and cheeses for a reinforced aperitif.
