We are in the heart of Tuscany. Here, since 1971, lies the Cantina Cooperativa Castelsina, a beautiful reality with deep roots between Siena and Arezzo. The essence of a community of passionate wine growers, made up of around 250 families, who cultivate a heritage of around 400 hectares of vineyards with passion and expertise. The one proposed here, in particular, is Chianti DOCG, Sangiovese-based, which alone makes up about 90% of the blend, flanked by Canaiolo and Colorino, both at 5%. A 'traditional' combination that provides the finished wine with beautiful depth and equally interesting complexity. After harvesting, the grapes are destemmed. The must is fermented in steel tanks at a controlled temperature, keeping it in contact with the skins for about 15-20 days. This period of maceration allows colour, tannins and aromas to be extracted. Subsequently, the wine undergoes malolactic fermentation and, after racking and a further racking to remove impurities, a short period of ageing in steel. In the glass, Castelsina's Chianti DOCG has a beautiful, bright and intense red colour. On the nose, it offers inviting aromas of ripe dark fruits, such as cherries and plums, enriched by light toasty notes. In the mouth, however, it surprises with the richness of its flavours. Broad, soft and pleasantly fruity. Its persistence and good balance make it an ideal companion for first courses with meat sauces and medium-aged cheeses. Between history, passion and craftsmanship.
