International critics have awarded numerous prizes to this particular Chianti Classico dedicated by the Castelli di Grevepesa winery to the figure of Pope Clement VII, whose severe effigy appears on the label. The result of careful selection of the bunches on the vine, this Chianti Classico is 100% Sangiovese, from the heart of the appellation. Fermentation at a controlled temperature of 28 degrees C with 10 days of maceration on the skins, after vinification this red wine matures partly in Slavonian oak barrels and partly in French barriques. No less than 12 months are needed to tame the tannin and make the wine pleasantly round. This is followed by the bottling phase and a further period of rest in the cellar while waiting to be put on the market. Intense ruby red colour, the nose has hints of berries, well integrated with notes of toast and vanilla resulting from ageing in wood. In the mouth it enjoys a perfect balance between all its parts, with sweet and velvety tannins that make it the ideal companion to the classic Florentine steak, perhaps served with its side of cannellini beans seasoned with a generous dose of extra virgin olive oil. From Chianti, of course.
There is no area more fascinating and full of history and tradition than Chianti. And a piece of this history is linked to the name of Castelli del Grevepesa. We are in San Casciano Val di Pesa, about fifteen kilometres from Florence, right at the gateway to the Chianti Classico region. Here, in 1965, a group of 18 winegrowers created a new reality. United by a single dream, that of keeping intact the secular traditions of Tuscan viticulture, the territory and the peasant customs. In order to do so, the focus is now on the production of high quality wines, in compliance with the strict rules of the Black Rooster Consortium. Since then, a lot of wine has passed through the jars of the Cantina, which over the years has grown to its current capacity of about 120 member companies, with vineyards that extend mainly in the municipalities of Greve in Chianti, San Casciano Val di Pesa (Mercatale Val di Pesa), Tavarnelle Val di Pesa and Barberino Val d'Elsa. The range has clearly expanded and now includes wines from all the major regional appellations. From Chianti and Chianti Classico, to Vernaccia, Nobile di Montepulciano and even includes a Maremma line, with Vermentino, Rosato and Morellino. But there's no shortage of goodies. Even if the dimensions have changed, the passion that is put into the work of every day is unchanged.
