With this Chianti DOCG Riserva, Castelsina reaches the pinnacle of its production. The winery, a medium-sized Tuscan cooperative, brings together no less than 250 winegrowers who take care of around 400 hectares of vineyards spread across the undulating hills in the provinces of Siena and Arezzo. This Chianti Riserva is composed mainly of Sangiovese, the region's main grape variety, in this case combined with a careful selection of other indigenous grapes, confirming the deep respect for the region's traditions and biodiversity. This blend creates a wine that reflects the terroir of origin but also the history and culture of this region. The vinification process follows strict quality standards: fermentation takes place in steel vats, with a long maceration on the skins lasting about 25 days. This allows a great extraction of aromas, colour and tannins, giving the wine a beautiful structure and great complexity. To obtain the designation 'Riserva', then, a Chianti DOCG must mature in the cellar for a minimum period of 24 months, of which at least three in the bottle. This long period of ageing allows the wine to develop greater richness than the 'basic' Chianti DOCG. In the glass, the Chianti Riserva di Castelsina has a deep, intense red colour. On the nose, it reveals a complex bouquet, dominated by notes of ripe red fruits and a distinctive scent of violets. On the palate, it reveals a warm and full structure, highlighting softness and roundness. The finish, ample and persistent, prolongs the pleasure of drinking for several seconds. A wine that invites one to pair it with rich, structured dishes. Thanks to its body and intensity, it goes well with grilled meats.
