    CHARACTERISTICS
    • TypeVino rosso fermo
    • Location Tuscany
    • Grapes Sangioveto (85%-90%) e Malvasia nera (15-10%)
    • Sensations Great olfactory intensity and a dense and elegant texture of sweet and silky tannins. The acidic backbone of Sangioveto gives great freshness and makes the sip particularly pleasant and crisp, with a long and very persistent finish. Ready to drink immediately and at the same time suitable for a very long ageing process
    • Vinification The grapes were harvested by hand during the first week of October and the bunches, placed in small open boxes to avoid crushing, were immediately transferred to the selection table for the sorting of the best fruit and the subsequent de-stemming of the grapes. The alcoholic fermentation took place in steel tanks, separately for the two varieties, at a temperature of about 25°C, for a period of 7 days. This was followed by about 20 days of maceration on the skins and then racking and malolactic fermentation. The wine was then transferred to barriques (50% new) where it remained for about 30 months. After the period in wood, the wine rested in a concrete tank before being bottled. I Sodi di S. Niccolò 2020 continued to age in the bottle for another 8 months before being released on the market.

"I Sodi di San Niccolò" Toscana IGT 2020
    • Today we are in the heart of the Chianti Classico region, in Castellina. This is the home of I Sodi di San Niccolò, the flagship wine of Castellare di Castellina. The name ‘Sodi’ comes from the Tuscan word used to indicate difficult terrain, while ‘San Niccolò’ refers to the 14th century church located on the company's property. This wine is one of the first expressions of the Supertuscan, even though it is made exclusively with native vines. Specifically, Sangiovese, which on the estate is called by the traditional name of ‘Sangioveto’, and Malvasia Nera. The percentages vary between 85 and 90% for Sangiovese, and between 10 and 15% for Malvasia. The vineyards are located at an altitude of 350-400 metres above sea level, planted in calcareous soil that gives the wine a marked minerality. The yield is limited to 40-45 quintals per hectare, guaranteeing a high quality of grapes. Vinification takes place in stainless steel, with malolactic fermentation carried out. Subsequently, the wine ages for 24-30 months in barriques, 50% of which are new, and is refined for a further 12 months in the bottle before being put on the market. It has an intense ruby red colour. It offers a highly concentrated bouquet, with notes of ripe red fruit, jam, spices, vanilla and liquorice. In the mouth it is characterised by a dense and elegant texture, supported by the acidity of Sangiovese, with sweet tannins and a long and persistent finish. I Sodi di San Niccolò is a wine for long ageing, capable of evolving for decades in the cellar. On the table it goes perfectly with salami and flavoursome meats, richly succulent dishes and mature cheeses.

Castellare di Castellina is a beautiful winery in the heart of the Chianti Classico region. Founded in the 70s by Paolo Panerai, long-standing publisher of the Class group, the winery is today one of the most important in the region, known for the production of high quality wines. The company started out producing Chianti Classico, but soon expanded to include other red and white wines, as well as grappa, olive oil and vinegar. Today the winery is a cutting-edge facility, using the latest technologies. It is no coincidence that Castellare di Castellina was the first winery in Italy to use steel for the fermentation of its wines and has always been committed to the research and development of new winemaking techniques. The property includes a historic villa, a castle and several vineyards. The villa is now a luxury hotel, where guests can stay and enjoy the beauty of the Tuscan countryside. The castle is a venue for events and tastings, where you can discover the company's wines and the history of the region. Awarded numerous international prizes, including the ‘Gold Medal’ at the Bordeaux International Wine Competition, Castellare di Castellina is a member of the Chianti Classico Wine Consortium.
