A fortunate blend of three grape varieties, Chardonnay alone accounts for about 60% of the cuvée, giving it elegance, finesse and citrus notes. Then Pinot Noir (30%), which brings structure, body and aromas of red fruits, and Pinot Meunier (10%) which contributes fruit and roundness. Fermentation takes place partly in steel and partly in large wooden barrels, where malolactic fermentation also partly takes place. This choice allows us to preserve the freshness and liveliness of the wine, while enhancing its aromatic complexity. In the glass, Cuvée Racines de Trois Brut has a brilliant straw yellow colour, with a fine and persistent perlage. The nose reveals a complex bouquet of yellow fruit, citrus, white flowers and light toasted notes. In the mouth, it is creamy and enveloping, with a pleasant freshness and a long saline persistence. Ideal as an aperitif, it also goes well with fish first and second courses, white meats and fresh cheeses.
