    CHARACTERISTICS

    • Sensations Straw yellow colour with fine and persistent perlage. Bouquet: the aromas range from bread crust to yeast and dried fruit, with some floral notes. Taste: full and rich, with a good acidity and a creamy sensation given by the fine foam, which cleans the mouth and gives a good aromatic persistence.
    • Vinification After manual harvesting in boxes and soft pressing, the free-run must is used with a 50% yield. Fermentation takes place at a controlled temperature and the wine rests and clarifies on the yeasts (separately) until the following spring when it is blended between Pinot Noir and Chardonnay and drawn. After a minimum of 30 months of refinement in the bottle at a temperature of 15 degrees C, the wine is put on the tip, followed by dègorgement and dosage. After a few months of further refinement in the bottle, an elegant and harmonious Alta Langa Brut is obtained, preferably suitable as an aperitif.

      Alta Langa "Oltrequota Cinquecento" Brut DOCG
    • In front of a bottle of Alta Langa DOCG, lovers of bubbles always pay close attention. They know, in fact, that this is certainly no ordinary production. Alta Langa means small numbers but great quality. This Brut proposed by Vite Colte is no exception. It is 80% Pinot Noir, and the remainder is Chardonnay. Harvesting is manual and the grapes are delivered to the cellar in crates to preserve their integrity. This is followed by soft pressing and careful vinification. The blending of Pinot and Chardonnay takes place only in the spring following the harvest, when the most delicate phase, that of frothing in the bottle, also begins. Refinement on the lees lasts for a minimum of 30 months. This is followed by disgorgement, or dégorgement as the French say, and a modest dosage. The result is a perlage of great elegance. A perfect glass as an aperitif but which can also accompany a fish-based dinner. Straw yellow colour with fine and persistent perlage. The nose has aromas of bread crust, yeast and dried fruit. In the mouth it is rich, endowed with a nice acidity and leaves the palate with a prolonged sensation of creaminess.
