We could call it the other Nebbiolo. The one produced in the northernmost part of the region. We are talking about the Carema DOC area, proposed here by the Cantina Produttori di Carema. It comes from hillside vineyards, cultivated with the traditional pergola system in the municipality of the same name. A typical, dry and quiet red that reveals its full potential from the first taste. In the winery, vinification is simple but precise. Fermentation in steel, with a maceration of about 12 days. Then, after racking, the wine rests in the cellar for about two years, including at least 12 months in large oak barrels. This reveals a wine characterized by a beautiful ruby red color of medium intensity with garnet highlights. On the nose, spicy notes of cinnamon, nutmeg and under-ripe fruit. In the mouth, on the other hand, it proves soft, with nice tannin and acidity well integrated with the sweet notes brought by aging. The finish, long and pleasant, recalls the spicy notes. Good today, if well stored this wine guarantees great longevity. Even beyond 10 years, according to the indications of its producers. Always ready to be uncorked, to accompany tasty dishes such as agnolotti, risottos and polenta concia. Also excellent with game and grilled meats. Medium-aged meats and cheeses.
Founded in 1960 by a group of 10 resident winegrowers, the Cantina dei Produttori Nebbiolo di Carema now has more than 100 members, including 71 grape contributors, all part-time producers, with an average age of about 55. During 2013, the aging cellar underwent a thorough renovation that led to the elimination of old, outdated barrels and replaced them with new ones made of Slavonian oak. Today the cellar is able to accommodate about 1,000 hectoliters in wood. The winery is committed to the preservation and enhancement of the winemaking culture, linked to the typical wine-making activity, with the renowned terraces, cultivated with pergola, and supported by the characteristic "Pilun" made of stone and lime. Carema production is limited to the municipality of the same name and currently has an area of about 13 hectares, registered in the DOC register since 1967.
