100% Cornalin, this little-known but very interesting grape variety, together with Mayolet, Fumin and Petit Rouge, forms the 'poker d'aces' of native Valdostan reds. It has been cultivated in the region since time immemorial, although it is a very demanding vine in terms of heat and brightness. It is especially characteristic of the central valley. The most vocated slope is undoubtedly the left orographic side, although, at an altitude that is not excessive and with good exposure, the opposite side can also give rise to very interesting wines. The one proposed here by Cave des Onze Communes is made from 100% steel, in order to bring out the best of the olfactory sensations characteristic of the vine. Deep ruby red in colour, with purple highlights, the nose reveals an intense perfume characterised by spicy notes of pepper and green leaves that are sometimes enriched by balsamic hints of mint and liquorice. In the mouth it is dry and soft, rich in important but velvety tannins. It is precisely this characteristic that makes Cornalin a good companion for many important dishes of Valle d'Aosta cuisine, especially those based on red meats and mature cheeses.
