The good body of enveloping tannins make it a good companion for many important dishes of Valdostan cuisine, especially red meats and mature cheeses.

      Cornalin Vallée d'Aosta DOC 2023
    • 100% Cornalin, this little-known but very interesting grape variety, together with Mayolet, Fumin and Petit Rouge, forms the 'poker d'aces' of native Valdostan reds. It has been cultivated in the region since time immemorial, although it is a very demanding vine in terms of heat and brightness. It is especially characteristic of the central valley. The most vocated slope is undoubtedly the left orographic side, although, at an altitude that is not excessive and with good exposure, the opposite side can also give rise to very interesting wines. The one proposed here by Cave des Onze Communes is made from 100% steel, in order to bring out the best of the olfactory sensations characteristic of the vine. Deep ruby red in colour, with purple highlights, the nose reveals an intense perfume characterised by spicy notes of pepper and green leaves that are sometimes enriched by balsamic hints of mint and liquorice. In the mouth it is dry and soft, rich in important but velvety tannins. It is precisely this characteristic that makes Cornalin a good companion for many important dishes of Valle d'Aosta cuisine, especially those based on red meats and mature cheeses.

      Immersed in the heart of the Alps, the Cave des Onze Communes, a cooperative winery, can count on approximately 63 hectares of vineyards, extremely parcelled out and distributed over the territory of 11 municipalities: Quart, Saint-Christophe, Aosta, Sarre, Saint Pierre, Villeneuve, Introd, Aymavilles, Jovençan, Gressan and Charvensod. We are located 'à l'Adret' and 'à l'Envers' of the Dora Baltea, with altitudes reaching 800 metres above sea level. Scenarios of extraordinary beauty but extremely impervious, where mechanisation is impossible. In the vineyards, strictly indigenous varieties, with limited use of pesticides and wise use of agronomic practices. In the company's precious catalogue, 22 DOC wines, 2 table wines, for a total production of around 500 thousand bottles per year.
